Michel co-founded Chez Roux alongside his late father, Albert Roux OBE. A familiar face, Michel often appears on television and is frequently spotted at his renowned two-Michelin-starred restaurant, Le Gavroche. Mentor, brand ambassador and celebrity speaker, Michel is the mastermind behind Chez Roux and is available to hire as a talent/chef.

Emily was born and raised in London, immersed in the gastronomic world of her family legacy. Her passion for food started at a young age and she has continued to follow in her father’s footsteps, dedicating her life to culinary excellence. Proud author and owner of Michelin Starred Caractère restaurant, Emily continues to help expand Chez Roux and reach new heights.

Claude Brougham
EXECUTIVE CHEF CONSULTANT
Claude is a pillar of Chez Roux. Thanks to her successful catering company in Switzerland and working for the renowned Mosimann, her multitasking and organizational skills became the foundation to the exceptional chef and businesswoman she is today. Claude also worked for the prestigious All England Tennis Club Wimbledon before taking the reins as Executive Chef Consultant at Chez Roux.

Gaël Combettes
CHIEF OPERATING OFFICER
Gaël, native of Carcassonne and former Communication Advisor to the European Parliament is the Chief Operating Officer at Chez Roux. His linguistic skills, extensive industry knowledge and his eye for detail has earned him full responsibility of all customers and clients at Chez Roux, following his five years working alongside Michel at Le Gavroche. No matter how big or small your request is, Gaël will go above and beyond to make it happen.

Gaetano Farucci
CHEF CONSULTANT
Born in Apulia, Italy, Gaetano graduated from culinary school and worked nearby before coming to England to start his career at Le Gavroche** in 2013. He began as a commis-chef before consecutive promotions, receiving the Head Chef title in 2018. Since 2022, Gaetano is Head Chef at Caractère* and Consultant chef at Chez Roux, where he oversees several of our events.

Rachel Humphrey
EXECUTIVE CHEF CONSULTANT
Rachel Humphrey began her culinary journey at Le Gavroche in 1996, inspired from the age of nine after watching the legendary Albert Roux on television. At eighteen, she joined the kitchen as an apprentice. Rising through the ranks to become Executive Chef, Rachel became part of the restaurant’s legacy. Following the closure of Le Gavroche, she now brings her deep-rooted commitment to the Roux philosophy to Chez Roux, where she continues to share her passion and expertise.

The Sisters
FRONT OF HOUSE CONSULTANTS
Ursula and Silvia Perberschlager, familiarly known as ‘The Sisters’, joined Le Gavroche in 2001. For The Sisters, it’s the culture of rigorous routine and mastery at Le Gavroche that fuels their passion for the job after more than two decades. Following on the closure of the restaurant, they are now part of Chez Roux, continuing their dedication to excellence and hospitality within the Roux legacy.

EXECUTIVE ASSISTANT
Edwina Simon started at Le Gavroche in 2013. Executive Assistant to Chef Michel, she enjoys the family-like culture at Chez Roux.
